The world renowned Atlantis, Palm Jumeirah is a 1,539 room Destination Resort Hotel complete with a Retail Village, Waterpark and Aquarium. The hotel is located in the middle of the crescent on the man-made island called “The Palm”.

As the appointed foodservice designers we were tasked with designing the hospitality facilities for the Resort which included two All Day Dining Restaurants, three in house Speciality Restaurants, three Celebrity Chef Operated Restaurants, Catering Facilities to serve 5,800m2 of meeting and function space, a Club Lounge, a Night Club as well as numerous Pantries, Bars and two large Fast Food Restaurants in the Waterpark. In total the Atlantis catering team comprises of over 500 chefs who serving more than 15,000 meals a day.


The biggest challenge was the sheer scale of the project, the support facilities to sustain the Food & Beverage outlets had to be substantial from the receiving, preparation and storage of the raw product to the Central Bakery which produces the majority of Breads, Cakes, Pastries and Confectionery for the whole Resort.  This was overcome by researching Commissary style preparation areas and large scale production equipment as well as working closely with the client whose sister property in the Bahamas had set the benchmark that had to be developed and improved upon.
